The spelling de Büfett, preferred at least in Germany, represents the Germanised pronunciation in /ɛt/. Such a pronunciation has established itself in many words like de Parkett, de Kabarett, etc. In the case of de Buffet, however, the French pronunciation has widely prevailed, which means that speakers now often pronounce /eː/ while reading and writing de Büfett.
