Etymology
From de gmh storch, gmh storc, from de goh storah, goh *storc(h), from de gmw-pro *stork, from de gem-pro *sturkaz.
Cognate to dialectal nl stork, en stork, sv stork. The expected German form is also de Stork, which was indeed in wide use, but has not become standardized. The shifted variant de Storch is probably due to the use of epenthetic vowels in Old High German, by which the uninflected stem goh storah alternated with inflected goh storc-. Such variation was generally levelled in favour of the inflected stem, but this was an apparent exception. Compare for the regular development goh starah alongside goh starc starc(h), whence gmh starc and modern de stark. Alternatively, de Storch could be an Upper German relict form (with [rx] from [rkx]), but the regional distribution does not seem to confirm this.
