Succotash 2 cups corn kernels (16 oz can) 2 cups cooked beans (pinto, kidney, lima, etc) Two medium tomatoes Half cup water One small onion (optional) butter or vegetable oil Dice the tomatoes into one-inch chunks If using an onion, sauté until transparent in butter or oil. Combine water, tomato, beans, corn and (optionally) the onion in a large pot Heat through Serve hot. 4
