Wash and blend the green bell peppers, scotch bonnet, and one onion. The blend should not be too smooth; a slightly coarse texture is preferred.
Step 2: Prepare the meat
Wash and season the assorted meat with salt, onions, and seasoning cubes. Boil until tender.
You may fry or grill the meat for extra flavor.
Step 3: Bleach the palm oil
Heat the palm oil in a pot until it becomes lighter in color. Be careful not to overheat it.
Allow it to cool slightly before use.
Step 4: Cook the stew base
Add chopped onions to the bleached oil.
Stir in locust beans and fry for a few minutes.
Add the blended pepper mix and cook until the water reduces and the oil begins to separate (about 20–30 minutes).
Step 5: Add meat and seasoning
Add the cooked meat and smoked fish.
Season with salt, seasoning cubes, and crayfish.
Stir well and allow to simmer for 10–15 minutes.
Serving
Serve hot with:
Ofada rice
White rice
Boiled yam or plantain
Tips
Locust beans (iru) is essential for authentic flavor.
Proper bleaching of palm oil gives the traditional Ofada taste.
The stew tastes even better the next day after the flavors have mixed well.
