When talking about subjects, the most usual way is omitting the articles. We don't say "Tengo la lengua" but "Tengo lengua".
Ser vs estar
To appreciate the difference between Ser and Estar, we must first realize that both words mean "to be". Generally, Estar is used to talk about the condition and location of things, while Ser is used for basic characteristics---like origin, identity, occupation, etc.---and miscellaneous other things like date and time.
Many times, people will use the terms 'temporary' and 'permanent' to distinguish between Estar and Ser, respectively. However, that approach can cause problems. For example, in Spanish, when someone dies we use Estar to say they're dead: "Está muerto". Certainly, death isn't temporary; rather, we use Estar because we're describing their condition.
